Three Ways With… Purple Sprouting Broccoli

Cousin to the broccoli, purple sprouting broccoli (or PSB), is a much tastier and, in our opinion, far superior vegetable. Here are three great recipes for you to try.

Purple Sprouting Broccoli with Anchovies
This is a great side dish, especially when served with lamb. Alternatively try serving with pasta and shavings of our Ewes’ natural rind cheese or on toast, topped with a poached egg.

250g purple sprouting broccoli
Large knob of butter and a little rapeseed oil
2 cloves of garlic, sliced
3 anchovy fillets, chopped
1 red chilli, finely sliced (optional)
Salt & pepper to season
Serves 2-4

1) Set a large pan of water over a high heat to boil.
2) Once boiling, add the purple sprouting broccoli and cook for 4-5 minutes, until just tender.
3) Drain the purple sprouting broccoli and immediately dunk into a bowl of iced water.
4) Drain again and dry using paper towels.
5) Heat a large frying pan over a low to medium heat, add the butter and oil.
6) Once the butter has melted, add the anchovy fillets and use a spoon to break the fillets down as they start to disintegrate into the fat.
7) Add the garlic and chilli, if using, and cook for a few seconds, until the aromas start to release.
8) Add the purple sprouting broccoli and toss to coat in the flavoured oil.
9) Cook for a further 4-5 minutes, until the purple sprouting broccoli is heated through. Season to taste, bearing in mind that the anchovies will have added a fair amount of salt to the dish.
10) Serve immediately.

Purple Sprouting Broccoli Gratin
This is another great side dish that can also be served as a main – simply add some bread and butter and a fresh green salad.

250g purple sprouting broccoli
1 tbsp rapeseed oil
1 medium onion, sliced
1 clove of garlic, sliced
250mls double cream
Salt and pepper for seasoning
50g breadcrumbs
50g strong and salty cheese such as our Ewes’ natural rind, grated
Serves 2-4

1) Preheat your oven to 180C. Set a large pan of water to boil over a high heat. Add the purple sprouting broccoli and cook for 4-5 minutes, until tender. Drain and set to one side.
2) Heat the rapeseed oil in a large frying pan over a low to medium heat. Add the onion and cook until soft.
3) Stir in the garlic, then add the cream. Cook for a couple of minutes until it has reduced and thickened. Season to taste.
4) Place the purple sprouting broccoli in a oven dish and pour over the cream.
5) Mix the breadcrumbs and grated cheese together and sprinkle over the top before placing in the oven for around 20 minutes.
6) Serve on the side with lamb, or fish, or as a main with bread a fresh green salad.

Purple Sprouting Broccoli and Beef Stir Fry
1 tbsp rapeseed oil
250g purple sprouting broccoli, sliced lengthways
1 clove of garlic, finely sliced
1 red chilli, finely sliced
3 tbsp oyster sauce
1/4 tsp fish sauce
1 tbsp soy sauce
200-250g beef skirt, sliced into bite size strips (fillet tails, featherblade or shoulder tenderloin are also good options)
Serves 2

1) Heat a tablespoon of oil in a wok over a high heat.
2) Once hot, add the garlic and chilli and stir into the oil for around 10-15 seconds.
3) Add the purple sprouting broccoli and toss to coat with the oil.
4) Stir fry for a minute or two, until turning tender, then add the oyster sauce, fish sauce and soy sauce.
5) Stir to incorporate all the sauces and ensure the purple sprouting broccoli is evenly coated.
6) Add the beef and stir into the sauce for just a minute or so, taking care to keep the beef rare and not over cook it. Serve immediately with rice.
